Oven baked pork chops

Ingredients:

  • 4 boneless pork chops 
  • 1/2 cup flour
  • Two cups plain panko
  • Two oranges
  • 1 lime
  • 1 tomato 
  • 2 Tablespoons cilantro 
  • 1/4 cup olive oil
  • 2 eggs
  • 2 Tablespoons red onion 
  • 2 cloves garlic 
  • 1 teaspoon thyme 
  • 1/2 teaspoon Himalayan salt
  • 1/4 teaspoon black pepper 

Recipe:

Preheat over to 375

Cut orange in half and squeeze juice in a gallon size zip lock bag and put pork chops in.

Add salt, pepper and flour to one bowl. Second bowl beat the eggs. Third bowl add breadcrumbs, thyme and grate the outside of the orange into the mixture.

Remove pork from bag and place in flour, then egg then breadcrumbs and place on a baking sheet.

Bake 35 minutes or cooked through.

While baking, cut up the tomato, other orange and add with cilantro, red onion and garlic in a bowl. Add the olive oil wnd lime juice and mix.

Serve fruit and veggies over the pork chop. Great with some mashed potatoes for a side.
