Baked chicken with ham or bacon

ingredients:

  • 4 chicken breasts
  • Slices of black forest ham and/or bacon
  • 1 cup shredded Gruyère cheese 
  • 1 cup plain panko breadcrumbs
  • 6 tablespoon butter divided in half 
  • 2 handfuls Italian cheese shredded divided in half 
  • ½ cup plus 2 T all-purpose flour
  • 2 large eggs beaten
  • 1 T Dijon mustard and 1 tsp. divided
  • 3 tablespoons minced shallots
  • 1 cup chicken stock low sodium 
  • ⅓ cup heavy cream
  • ¼ teaspoon Himalayan salt
  • ⅛ teaspoon pepper 
  • 1 teaspoon fresh chopped thyme 

Recipe:

Preheat oven to 400.

Pound chicken flat.

Add shredded cheese and one slice or bacon or ham in the middle of the chicken. Roll up with seam down.

Set out three bowls.

1st bowl is eggs and 1 T mustard mix well with a wisk.  

2nd bowl is flour

3rd bowl is panko, 3 T butter melted and Italian cheese.

Put chicken in flour then egg then panko mix place on baking sheet. 

Bake 25 minutes.

Meanwhile boil some rice of your choice.

And start the sauce. Add to a small pot over low heat, 3 T butter, tyme chopped, heavy cream, chicken stock, shallots, 2 T flour, salt, pepper, 1 tsp mustard and handful of Italian cheese shredded. Heat til blended and melted together.

Add rice to a plate, place chicken on top and pour sauce on.
