Baked chicken parmesan

Ingredients:

  • Four chicken breasts 
  • Tomato basil sauce one jar
  • 4 tsp. fresh chopped basil
  • Sliced mozzarella cheese one package
  • 1/4 tsp ground pepper 
  • 1/2 cup Parmesan cheese 
  • 1 cup Italian breadcrumbs 
  • 2 eggs
  • 2 Tablespoons olive oil

Directions:

Preheat oven to 400.

Pound chicken flat.

In one bowl beat eggs.

In a second bowl add pepper, Parmesan cheese and breadcrumbs.

Dredge chicken in egg then breadcrumb mixture.

Add olive oil to a frying pan and for a few minutes on each side cook chicken so it is a golden brown color.

Place in oven for 20 minutes.

Remove and top with a spoonful of sauce in the middle of each chicken, couple slices of mozzarella.

Put back in the oven for 3 minutes.

Top with about 1 teaspoon each of cut up basil.
