Herbed pork tenderloin
Ingredients:
- 2 Tablespoons Kosher salt
- 1 1/2 Tablespoons black pepper
- 4 pork tenderloins
- 1 teaspoon ground tumeric
- 1 teaspoon crushed dried rosemary
- 1 cup flat leaf parsley chopped
- 1/3 cup sage leaves chopped
- 4 Tablespoons butter melted
- 4 cloves garlic crushed
- 4 Tablespoons olive oil
- 1/2 cup basil chopped
- 1/2 cup mint chopped
- 2 Tablespoons balsamic vinegar
- 1/2 Teaspoon lemon zest
- Juice of one lemon
Recipe:
Preheat oven to 325.
Place salt, pepper, rosemary and tumeric in a bowl coat the pork.
Add 2 Tablespoons oil to a pan and cook pork on medium high on both sides until golden brown.
Meanwhile mix butter, garlic, parsley and sage in a bowl.
Remove pork from pan place each tenderloin on a piece of foil and wrap with the sage mixture.
Cook in oven for 25 minutes or until cooked through. Then let sit 15 minutes on top of stove.
Meanwhile mix basil, mint, 2 Tablespoons olive oil, balsamic vinegar and lemon in a bowl.
Add mixture to the top of each pork.
I love to serve with mashed potatoes.
