Chicken and vegetable stir fry

Ingredients:

  • 3 breasts of chicken chopped up
  • 2 celery stalks cut up
  • 1 red bell pepper chopped up
  • 1 batch of green onions chopped 
  • 3 cups rice of your choice 
  • 1/2 cup dry roasted peanuts 
  • 3 tablespoons soy sauce
  • 1 tablespoon dry sherry
  • 1 tablespoon corn starch
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • ½ teaspoon crushed red pepper flakes
  • ¼ teaspoon ground ginger
  • ⅓ cup water
  • 1 tablespoons olive oil
  • ¼ teaspoon salt
  • 3 cloves garlic

Directions:

Add chopped chicken to a pan with olive oil and cook til done.

Add all sauce items and stir on low til mixed.

Add vegetables and garlic.

Serve over rice of your choice and top with peanuts.
