Baked chicken with vegetables

ingredients:

  • 4 skinless chicken breasts 
  • Himalayan salt and pepper to taste
  • 2 tsp olive oil 
  • 1 cup shredded mozzarella cheese
  • 2 tsp Italian seasoning 
  • Four cut up vegetables of your choice: bell peppers, onion, cucumber, carrots, mushrooms, tomato

Recipe:

Preheat oven to 400

Cut tiny slits in all the chicken breasts.

Season with salt and pepper 

Drizzle olive oil over.

Add the dried Italian seasoning.

Cut up the vegggies and insert them in the cut slots in the chicken.

Bake 25 minutes or until no longer pink.

Sprinkle with the cheese and add a sheet of tin foil to melt the cheese while still warm.

Rice is a good side to serve with it.
